My in-laws arrived this weekend and will be staying with us for awhile. While most people cringe at the thought of visiting in-laws, I have been looking forward to it. We are so excited to have Hubby's family close to us, and are happy we have an empty room (and garage!) to offer. My one trepidation, however, has been the food. Normally this wouldn't be an issue, but with our new dietary practices and our guests' love of bread and potatoes, I am somewhat anxious about meal planning. In addition, Hubby proclaimed last night that he's tired of the diet already (and he claimed "dietary flexibility" last Thursday through Saturday), so I'm feeling the need to really impress this week. On the menu:
- Salmon (I made this last week, and Hubby enjoyed it. However, I didn't make enough, so this time I'll be sure to pack leftovers for this lunch beforehand.) I will cook it on the stove in some pastured butter, seasoned with a curry-salt blend (1 part curry seasoning to 3 parts Real Salt).
- Chicken Enchilada Stuffed Zucchini Boats (I'll make the sausage variety for lunch.)
- Spicy Paprika and Lime Chicken
- Buffalo Chicken Lettuce Wraps
- Simple Carnitas, again - these were a big hit last time. I'll serve with fresh homemade pico and guacamole, recipes to come
- Meatloaf

ReplyDeleteI'm anxious to hear how everyone likes the new dishes! How about trying a salmon chowder? I made that tonight. It was really yummy and used relatively little leftover salmon. Mom
ReplyDeleteI made a delicious salmon chowder a year or so ago, but they usually include potatoes and corn, which we are avoiding. We had the salmon last night, and I probably could have made 2 whole filets without leftovers! I actually decided to bake it at the last minute. Cooked it at 425 for about 25 min. Brushed it with butter, poured on some chicken broth and a little lemon juice, added pepper and tarragon. It was great!
